What does a key change do?
By playing the melody from a different starting note, what you're actually doing is playing it in a different “key”. This “scale” represents the notes your version of the airport tune or indeed a whole song in that particular key would use.
How does changing key change a song?
Music in a major key can be transposed to any other major key; music in a minor key can be transposed to any other minor key. (Changing a piece from minor to major or vice-versa requires many more changes than simple transposition.) A piece will also sound higher or lower once it is transposed.
Why do key changes sound good?
Relaxation in energy would be the opposite direction, usually. Large changes in key signature (many accidentals changing) are more likely to give a sense that you've gone somewhere pretty far from where you were, and small changes seem nearer by.
